Simple and delicious, Mutton Banjara is very famous dish in the households of Rajasthani.The onions are ground to paste and then sauteed till it is nice and brown, to which the mutton is added and cooked along with yogurt and other Indian spice to create a rich and delicious curry. Serve it along with hot phulkas.


The easiest Mutton Curry made with simple ingredients along with a simple recipe. No marination, no slow cooking, this recipe is apt for all who are in a rush to complete their dinner preparations. As the name says, Mutton Banjara, where Banjara means Gypsies. Hence the dish that is made in jiffy with the simplest ingredients in Mutton Banjara.

Serve Rajasthani Mutton Banjara along with Roomali Roti, Phulkas or Steamed rice for a weekend dinner.


How to make Rajasthani Style Mutton Banjara Recipe

  • To begin making the Rajasthani Mutton Banjara recipe, heat oil in a non stick wok and add bay leaf, pepper, cloves, cinnamon and dry red chilies and sauté for a minute.


  • Add onion and ginger garlic paste and fry it till its golden in colour and leaves a nice aroma.


  • Add mutton along with curd and mix well. Cook on high till curd water evaporates.


  • Now add coriander powder, red chilli powder, turmeric and mix well. Fry on low heat till oil starts leaving from sides.



  • Add warm water as per requirement and adjust salt to taste.
  • Mix well and pressure cook the mutton till soft. Carefully remove the lid and add crushed coriander seeds all over and give a gentle mix.



  • Serve Rajasthani Mutton Banjara along with Roomali Roti, Phulkas or Steamed rice for a weekend dinner.

kalakand preparation

Very tasty and easy kalakand preparation

Ingredients needed:

Milk-3 liter

Sugar-1 cup

Water-2 tbsp

Lemon juice-2 tsp

Cardamom powder-1/4 tsp

Cashew nut-5

Method:

Heat milk in a pan.

Choose heavy bottomed pan to avoid burning.

Keep stirring in a medium flame.

After 15 minutes the milk starts to thicken.


Squeeze lemon to prepare lemon juice and keep it in aside.

Pour lemon juice into a milk.

After 10 minutes the milk starts to curdle.

Add 1 cup sugar and keep stirring in a low flame.

After 10 minutes milk starts to thicken.

Now add cardamom powder and turn off the flame.

Transfer this mixture into a greased plate.

Allow it to rest for 10 hours.

After 10 hours cut into square shape.

Now kalakand is ready.

Garnish with cashew nuts.

CHICKEN SHAWARAM

Chicken Shawarma is a popular street food recipe in India, made with vegetables and chicken in a special soft bread. And the garlic is topped with creamy mayo. It is very easy for everyone to enjoy the recipe.

required things

Bread
 1 cup hot water
1 tsp sugar
2 tablespoons yeast
1 tsp salt
2 tbsp oil
3 cups maida (375 g)

For vegetable
1Carrots, 1Cucumbers, 1Capsicum
5 mint leaves
1 large lemon
1/2 tsp salt
Pepper

For Chicken

1/2 kg chicken
1/4 tsp turmeric powder
1 tablespoon cumin powder
2 tablespoons chilli powder
4 tbsp yogurt

Salt and pepper
1 tsp lemon juice
3 tbsp of oil

For garlic mayonnaise
1/2 cup mayonnaise
1 garlic
1/4 tsp pepper

Decorate

Sliced ​​onions

Process

1) In a mixing bowl, add sugar and yeast with warm water. Set aside for 5 minutes. In a bowl, combine the maida, salt, oil and yeast mixture and simmer for 10 minutes. Then cover for 1.30 to 2 hours.

2) Once the dough has doubled, divide it into 10 parts, roll the balls, and cover for 5-10 minutes. Heat the tawa and cook until the bread is well cooked.

3) In a mixing bowl, add carrots, cucumber and capsicum. Add the finely chopped mint leaves, lemon juice, salt and pepper and set aside to give a mixture.



4) Combine boneless chicken pieces in a mixing pan and add yogurt, turmeric, chilli powder, cumin, salt, pepper and lemon juice. Marinate for 30 minutes and fry in oil until the sides are browned. Cut the chicken into small pieces and set aside.

5) In a mixing pan, add mayonnaise, chopped garlic, pepper and mix well.

6) Take a loaf and spread a little garlic mayo in the center of the chicken, then fold in a little vegetable and fresh onion and some extra garlic mayo.

Chicken tikka masala, a buttery spiced tomato chicken curry, is said to be a British invention. I determined to invent a new dish by add rice to the curry, making it a one-pot meal.

1 ½ cups basmati rice, soaked for 15-30 minutes

3 tablespoons oil of choice

1 onion, diced

4 teaspoons minced garlic

1 teaspoons minced ginger

1 Serrano pepper or green chili, minced

1 ½ - 2 pounds skinless and boneless chicken thighs, cut into quarters

SPICES

2 teaspoons coriander powder

2 teaspoons paprika

2 teaspoons salt

1 teaspoon garam masala

½ teaspoon ground cumin

½ teaspoon turmeric

¼ teaspoon ground cardamom

¼ teaspoon cayenne

1 cup canned tomato sauce

¼ cup heavy cream or full-fat coconut milk

1 cup water

Cilantro, garnish

Direction for cooking:

1. Soak the basmati rice in cold water for 15-30 minutes. Drain, rinse and set aside.

2. Press the sauté button on instant pot and add the oil and onions to the pot. Stir-fry for 6-7 minutes, or waiting they begin to brown.

3. Adding the garlic, ginger, Serrano pepper, stir, then add the chicken and stir-fry for 5-6 minutes or till the outside of the chicken is no longer pink.

4. Adding the spices, give the pot a quick stir, then add the tomato sauce and heavy cream.

5. Pour one cup of water and the rice into the pot and mix well.

6. Secure the lid, close the pressure valve and cook for six minutes at high pressure.

7. obviously release pressure for ten minutes. Open the valve to release any remaining pressure.

8. Sprinkle with cilantro and serve.

INGREDIENTS:

400 gm curd or 250g readymade hung,curd¼ cup, boiled & mashed potato (1 small size)¼ cup, grated paneer (approx 50g)¼ ,cup grated processed cheese (approx 2 cubes)1 ½ ,cup bread crumbs,1 tbsp finely chopped mint leaves,1 tbsp finely chopped coriander leaves,2-3 finely chopped green chillies½,tsp grated ginger¼,tsp cardamom powderSalt to tasteOil for frying.



METHOD:

1.To make hung curd, place a fine mesh strainer or Muslin cloth over a bowl.

2.Put the curd on the strainer.

3.Cover the strainer and put it along with bowl in refrigerator for 8-9 hours.

4.Water from Curd will drain in the bowl. Discard this water.

5.Take out the Hung curd in a bowl.

6.Add potatoes, paneer, cheese, ½ cup bread crumbs, mint leaves, coriander leaves, green chillies, ginger, cardamom powder & salt to taste. Mix will with a spoon.

7.Cover & freeze this mixture for 1 hour so it becomes stiff. 

8.After 1 hour, take a spoonful of mixture & roll it into cylinder shape kebabs.

9.Coat with 1 cup fresh bread crumbs. Fry immediately or refrigerate until needed to serve. 

10.Heat oil for frying. Keep the flame medium.

11.Fry Dahi ke Kebab until golden brown in color.

12.Remove the paper napkin.

13.Serve hot with ketchup or green chutney.

  • 1 cup All purpose flour
  • 1 tablespoon chickpea flour
  • 2 tablespoons of rice flour
  • 2 boiled potatoes
  • 1 carrot
  • 2 tablespoons of ginger and garlic paste
  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon salt
  • 2 tablespoons of olive oil
  • 2 tablespoons of flaxseed powder

How to prepare the recipe

In a bowl, add all purpose flour, chickpea flour and rice flour. Add one carrot chopped or grated into the mixture. To it add boiled mashe potato. You can also use spinach to make this recipe. Add 1 tablespoon of red chili powder, 1 teaspoon of turmeric powder, 1 tablespoon of salt,2 tablespoons of flaxseed powder and 1 tablespoon of ginger and garlic paste. Add water gradually and mix it very well. The mixture must resemble like dosa batter consistency. You can add variations to it based on your taste. Heat a pan and pour a full of dosa batter to it. Drizzle oil around it and cook both the sides. Cover the pan using a lid to make the cooking faster.

INGREDIENTS

Oil - 4 tb spoon

Egg - 2 

Black pepper - 1 tea spoon

A pinch of salt

Spring onion bulbs - 2 

Cooked rice - 2 cup

Soy sauce - 1 tea spoon

Spring onion greens - 2 

INSTRUCTIONS

Take a fry pan and add two table spoon oil to it. Heat it on medium flame. Break up two egg and add to the pan. Add 1/2 tea spoon black pepper powder and a pinch of salt. Then scramble the egg and keep aside. 

Then take a pan, and add one table spoon oil to it. Add two chopped spring onion in to the pan. Cook it for a minute. Add two cup of cooked rice. Mix it well. Then add one tea spoon soy sauce. Add a pinch of salt. Then add scrambled egg to it. Mix it well. Then add two chopped spring onion greens to it. Mix it well and cook it for 30 seconds. Then move it in a clean bowl. Decorate with spring onion greens. Serve it freshly.

Ingredients of Gulab Jamun

  • 100 Gram Khoya (firmly packed)
  • 1 tbsp Refined flour or soojee
  • 1/4 tsp Baking soda
  • 2 cups Sugar
  • 2 cups Water
  • 2 tbsp Milk (mixed with a little water)
  • 4 Green cardamoms (slightly crushed)
  • Ghee
  • Cube of bread

How to Make Gulab Jamun

  • With the heel of your palm or the base of a flat metal bowl, mash the khoya, so that no grains remain.

  • Mix in the flour and baking soda and knead into firm dough. You can use a food processor too.

  • The dough should be firm but pliable and should not feel dry. If it does feel dry, wet your hands and work the dough again.

  • Shape the dough into marble-sized balls (jamuns) that are smooth and creaseless. The shape can be round or oblong.

  • Heat ghee in the kadahi till a piece of dough tossed in comes up at once.

  • Lower heat and fry a cube of bread till light brown (this lowers the temperature of the ghee).

  • Lift out bread and add as many jamuns as will fit in, without one touching the other.

  • Keeping the heat low, fry these till a golden brown all over.

  • Drain the jamuns out of the ghee, and fry the next lot, increasing the heat for a few seconds and then lowering it again before adding the jamuns.

  • Keep the gulab jamuns aside till the syrup is ready.

  • Mix the sugar and water and place over low heat, stirring till the sugar dissolves. Make sure it does not boil.

  • Increase the heat once the sugar dissolves, and then bring mixture to a boil.

  • Add the milk and water mixture and continue boiling over high flame, without stirring.

  • Skim off any scum that collects on the sides of the pan.

  • Cook till syrup thickens a bit. A finger dipped in slightly cold syrup should form a coating on it for a few seconds.

  • Take syrup off stove and cool for a minimum of half an hour. Strain through a fine nylon sieve or muslin cloth.

  • Add cardamom and bring syrup to a boil again.

  • Add the fried gulab jamuns to it and put off the heat. Let jamuns soak for at least half an hour before serving.
